This peach ice cream topping will blow your mind. The depth of flavors is absolutely amazing and the pecans add a great texture. The ginger ale is an unexpected, worthwhile addition.

Ingredients
  • ¾ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • 2 large peaches, peeled, core removed, and cut into ¼ inch cubes
  • ¼ cup ginger ale
  • 2 tablespoons bourbon (or whiskey)
  • ¼ cup pecans, coarsely chopped
  • ¼ cup turbinado sugar (or brown sugar)
  • vanilla ice cream
Instructions
  1. Heat all ingredients but the ice cream in a small pan over medium high heat. Bring to a boil, then reduce to low and simmer for 4 minutes until peaches are tender.
  2. Add more ginger ale, ginger, or cinnamon to taste.
  3. Remove from heat and let cool in the sauce pan.
  4. Keep at room temperature if using immediately. If using later, chill and bring back to room temperature before serving
  5. Can be made a day in advance.
