Broccoli couscous

This is great as a side item or for a healthy lunch.  It takes about 10 minutes total to cook, so you will never waste broccoli again.  It also freezes well, so would be a great way to use up any aging broccoli.  You might also want to add pulled pork or chicken to make it a bit more hearty for the meat lovers in your gang.   You might also throw on a little parmesan cheese as a final step (I was just out or I would have added it).

Ingredients
  • 2 tablespoons olive oil
  • 2 tablespoons orange / satsuma juice
  • 1 garlic clove
  • 1 teaspoon lime juice.
  • 1 cup couscous
  • 1½ cup vegetable broth
  • salt and pepper
  • 2 cups cut broccoli flowerets
  • ½ cup white onion or leeks
Instructions
  1. Whisk 1⁄2 of the olive oil, orange juice, 1⁄2 of the garlic clove, and lime juice in small bowl; set dressing aside.
  2. Boil 1 cup vegetable broth, add couscous. Cover with a lid and remove from heat. Set aside.
  3. Heat 1⁄2 of the olive oil in heavy medium saucepan over medium heat. Add onions and cook for 3 minutes. Add ½ of the garlic and cook for one more minute. Pour in ½ cup vegetable broth and broccoli. Cover and cook for 3 minutes or until broccoli is tender and broth is absorbed.
  4. Mix together couscous and broccoli mixture, Stir in dressing, salt and pepper. Serve warm or cold.
