The coated cranberries give this an elegant look that really elevates it to the next level. Consider using goat cheese too.

Ingredients
  • 1½ cups fresh cranberries
  • ½ cup maple syrup
  • ½ cup sugar for the syrup
  • ¼ cup sugar for rolling the cranberries
  • 16 sturdy wheat crackers
  • 8 oz Brie cheese (or goat cheese)
  • cranberry chutney (I included an awesome recipe for this in the linked post)
  • fresh mint for garnish
Instructions
  1. Rinse and drain cranberries, place in large bowl.
  2. Heat sugar and syrup in a small sauce pan until warm and the sugar melts (not hot or the cranberries will burst)
  3. Pour syrup mixture over cranberries and stir until all cranberries are coated.
  4. Cool, cover, and let soak in the refrigerator overnight.
  5. Put ¼ cup of sugar on a plate.
  6. Brush off any sugar/syrup clumps from the cranberries.
  7. Put half of the cranberries onto the sugar plate and gently toss to fully coat. Place on a baking sheet to dry. Repeat with second half and let sit until dry - about an hour.
  8. Assemble crackers with one slice of brie, a light layer of cranberry chutney, and 3 sugared cranberries.
  9. Garnish with fresh mint sprigs.
