- 1 ham hock
- ½ small onion, diced
- one large bunch of collard greens, cut into ¾ inch strips
- white vinegar
- enough water to cover collards
- Add the ham hock and onions with olive oil in a large pot and heat until onions are translucent. Add collards. Cover with water and add salt to taste. Cook over low to medium heat for 1 hour. Taste and continue to cook until greens are not bitter. This could take up to two hours depending on your preference.
- Garish individual servings with white, red, or apple cider vinegar.
