This soup is just what you need for a weeknight when you want something both healthy and fast.  Turn the heat up or down with the peppers.  Paleo friendly if that’s important to you.

Ingredients
  • 1 large chicken breast, thinly sliced
  • 4 cups chicken broth
  • 1 ½ cup coconut milk
  • ½ head cabbage, thinly sliced
  • 15 small tomatoes, sliced in half
  • 2 tablespoons curry powder
  • 3 teaspoons fresh or ground ginger
  • 1 fresno pepper, thinly sliced
  • 1 jalapeno or habnanero pepper, thinly sliced
  • ¼ cup lime juice
  • 2 cups collard greens
  • cilantro for topping
Instructions
  1. Combine chicken broth, coconut milk, cabbage and tomatoes, curry powder, ginger, habaneroes and scotch bonnet pepper in a large pot. Coo 15 minutes on medium heat.
  2. Add chicken to soup and cook for 5 minutes. Add collard greens and cook for 2 - 3 minutes until just wilted. Add lime juice to taste and season with salt and pepper. Pour into bowls and top with cilantro.
